Stout vs. Lager: How Irish Beer Differs from Czech

Stout is a top-fermented dark beer with flavours of roasted barley, coffee and chocolate, while Czech lager is bottom-fermented and prized for its hop bitterness and crisp bite. They differ in yeast, malt, carbonation and serving temperature.

How does the fermentation differ?

The fundamental difference lies in the yeast. Stout is top-fermented at temperatures of around 15 to 24 degrees Celsius; the yeast works near the surface and works quickly, giving the beer a fruitier, fuller profile. Lager is bottom-fermented at 7 to 13 degrees and then matures slowly, or lagers, in cold cellars, which is where the name comes from. The result is a clean, sparkling flavour.

Why is stout black?

Stout owes its colour to roasted unmalted barley, which is roasted much like coffee beans. That is what gives Guinness its notes of espresso and dark chocolate. Czech lager uses Pilsner malt dried at low temperatures, hence its golden colour. A curious fact: Guinness is not actually black but a very dark ruby. Hold it up to the light and see for yourself.

Is stout stronger than lager?

Surprisingly, it is often the other way round. Guinness Draught has just 4.2 percent alcohol and roughly 125 calories per half litre, less than a Czech 12-degree lager, which typically has 4.7 to 5 percent. Stout earned its reputation as a heavy beer through its full flavour, not its alcohol content.
